What is ‘bleached’ flour?

You can find regular all-purpose flour and unbleached all-purpose flour side by side at most supermarkets.

🌾While flour naturally whitens as it ages because it is exposed to oxygen, this process takes several weeks, requiring storage of the flour.

🌾To speed up this process, millers add flour conditioners. This process is often referred to as bleaching.

🌾Bleaching does not impact the safety or nutrition of the flour, but it does create a finer texture and improves baking quality, and is often sought after for these reasons.
